5 minutes to make 10 minutes to bake and less then 1 minute to eat!!!
Ingredients :
1 cup flour
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/3 cup sugar
1 stick butter diced, room temperature
1 egg yolk
Preheat oven to 350°F.
In a bowl, mix flour, salt and cinnamon.
In another bowl, beat butter and sugar 2 minutes with a mixer. Whisk egg, then flour mixture and beat well.
Place the dough between 2 parchments paper and roll into 1/4 inch.
Cut dough, using a 2' round cutter and place cookies in sheet pan. Bake for 10 minutes.
In a bowl, mix 1 teaspoon of cinnamon and 1 teaspoon of sugar. Sprinkle over hot cookies.

This week, I received a new cook book. Again, you'll tell me! Yes, but it's a dessert cookbook from Alain Ducasse.
He wrote it with the dieteticien Paule Neyrat. The result : desserts with less sugar and lot of flavor. Hum...that's good for us.
Today, I tried the plum pie and it was amazing.
Ingredients :
4 Tbsp butter diced
1 1/3 cup flour
1/3 cup potato starch
1 Tbsp rapadura (whole organic sugar)
2 pinch salt
1 egg
100ml water
21oz mirabelle plums (I used frozen but fresh is better)
2 Tbsp rice syrup
1 egg
3 Tbsp French "creme fraiche" or sour cream
1/4 cup Kirsch
In a bowl or directly on the table, sift together flour and potato starch. Add salt and rapadura, then mix well.
Form a hole in the center and pour in butter. Mix with yours hands until the mixture look like a breadcrumbs.
Then add egg and the water. Knead to form a dough.
Wrap the dough with plastic wrap and refrigerate 30 minutes.
Preheat oven to 350°F.
Roll out the dough on a lightly floured surface to a circle. Place onto your pie plate. Make some holes with a fork and bake for 10 minutes.
In a bowl, mix well rice syrup, sour cream, egg and Kirsch.
Remove the pan form the oven and add plums. Fill with the cream mixture then bake for 30 minutes.I bake mine 10 minutes more because my plums were frozen.
This pie is delicious just a little warm.

It's rain since 3 days...We needed some colors, some sun. We found it in this dish...so delicious!
Ingredients for the meatballs:
2 turkey fillets chopped really fine
1 glove garlic chopped
1 cup spinach cooked chopped
1 tablespoon sesame seeds
1 tablespoon soy sauce
1 tablespoon lemon juice
Pepper
Preheat oven to 350°F and line baking pan with backing parchment.
In a bowl, mix turkey, spinach, sesame seeds, garlic, lemon, soy sauce, and pepper.
Shape mixture into 1 inch ball. Place in baking pan and bake for 15 minutes. 2 minutes before the end, use the oven grill position.
Ingredients for flan :
1 cup spinach cooked and chopped
11/2 cup pumpkin puree
1/2 cup carrots puree
2 eggs
1/2 cup cream
Salt and pepper
Preheat oven to 400°F.Greased ramekins and refrigerate.
In a pan cook carrot and pumpkin together 10 minutes, keep stirring. In another pan do the same with spinach.
In a bowl, mix eggs, cream, salt and pepper. Mix 1/4 of the mixture into the spinach and the rest into the pumpkin/carrots.
Full 1/3 of each ramekin with spinach mixture and 2/3 with pumkin/carrots mixture.
Place ramekins in a large baking dish and fill with hot water about 2/3 of ramekins. Bake for 12 minutes. Check with a toothpic.
Remove and invert each ramekin in a plate. Serve immediatly with meatballs.

Beet is not really popular at home. Anyway, today I've decided to try a recipe from Julie Andrieux and it was delicious.
Ingredients :
3oz cream
1/2 Tablespoon lemon's juice
1 Tablespoon chervil
2oz walnuts chopped
1 Tablespoon mustard
1 pound beet cooked
A bunch of arugula
In a bowl, whisk together cream, lemon, mustard, salt and pepper.
Peel beets if necessary and slice them.
In a plate, place beet on a top of aragula. Lay on 1 tablespoon of sauce and stir walnuts and chervil.

Do you know this little treat "Choux à la creme"? It's a French pastry make with the dough choux and pastry cream. It's really really good.
Yesterday I decided to try to make some for a meeting. The result was really good.
I added some orange zeste on the cream and on the icing.
Ingredients for the dough :
1 cup whole milk
1 tsp sugar
1/2 tsp salt
6 tablespoons butter diced
125g flour
4 eggs
Ingredients for the pastry cream :
2 cups whole milk
6 eggs yolks
1/2 cup sugar
40g cornstach
orange zest
Ingredients for the icing :
3oz semisweet chocolate
2 tablespoons butter diced
orange's zest
Directions :
Preheat over to 400°F.
Make the dough : in a pan, bring milk, sugar, salt and butter to a boil. Remove from the heat then add all the flour and mix vigorously. Put back
on the heat and mix until the dough is dry (30 secondes). Transfer the mixture in a bowl and add eggs one at a time. The dough must be neither too soft nor too dry. Then use a
pastry bag to make large circles onto the baking sheet (space 1 inch apart). Bake for about 20 minutes. Let's cool.
Make the cream : in a bowl, mix eggs yolks, sugar and zest. Then stir in cornstach.
In a pan, bring milk to a boil. Then pour half of the milk into the eggs/sugar mixture. Mix well and pour the mixture in the pan. Put back on the heat and cook for 2 minutes
stirring constantly until it thicken. Pour the cream in a bowl, cover and refrigerate overnight.
Make the icing: Place a medium cooking pan in a high heat and pour around 1 litre of water. Cut chocolate into small pieces and put in a bowl.
Place the bowl into the pan and stir gently to melt. When chocolate is almost melt, remove the bowl from the pan, add butter and zest and keep stirring until it's smooth.
With a little knife, make a little hole under puffs. With a pastry bag fill well puffs with the cream. They must be full and heavy. Then dip the tops of the puffs in the chocolate
icing. Chill at least 1 hour and enjoy!
