It's raining since 2 days now, it's sad. We really need something sweet with a lot of chocolate. I thought about this delicious cookies Oreo, we tested in USA. I've this recipe from the chef Emily Isaac Trois Pommes Patisserie in Brooklyn. Do you know her store?
I made cookies and now I'm waiting for Alexia (she's still at school) to take a snack. Ok, I've already tested one and it's really really good!
Ingredients for the dough :
11/3 cups cocoa powder
11/2 cups flour
1/4 teaspoon salt
2 stick unsalted butter, room temperature
2 cups granulated sugar
1 teaspoon vanilla extract
Ingredients for the filling :
1 stick unsalted butter
1/2 cup butter, room temperature
3 cups confectionner's sugar
1 teaspoon vanilla
In a bowl, sift cocoa, flour and salt, reserve.
Using a mixer, cream butter and sugar. Add eggs and vanilla, mix well.
Add dry ingredients and mix until incorporate.
Divide dough in 2 pieces and place one between 2 parchment paper. Roll into 1/4 inch and repeat with the other dough. Refrigerate all at least one hour.
Preheat oven to 325°F and line 2 sheets pan with baking parchment.
Cut dough, using a 2' round cutter and place cookies in sheet pan. Chill for 20 minutes, then bake for 18 minutes. Let 's cool completely.
Prepare the filling : cream butter with the mixer and add sugar and vanilla.
Flip half of the cookies, and top each with 1 tablespoon of filling. Press the remaining cookies on the top.
